This is gonna sound boring i know.........but there's nothing nicer than blackened pan-fried Scottish salmon.............
and the nicest meal i ever ate was weirdly the most simple.........
it was griddled peppers, courgettes and oinion.....served with home made bread and there was balsamic vinegar and good olive oil to dip into....it was in Nottingham and the cafe was so chilled out it rocked!!.......i loved it.......
but i do love Mexican too........in fact i ADORE it........

Mmmmmm....Mexican....sounds GOOD, Fluffy! We have tons of great Mexican restaurants here in SD.
Mine is truly boring--potatoes. Every way imaginable--baked with butter, sour cream, and cheese, scalloped, mashed, riced, hashed, you name it. We eat rice and pasta mostly 'cause if I fixed potatoes, I would weigh, like, a million pounds!!!!
I make a fantastic veggie soup that has a little cilantro thrown in at the end--it is fab with pumpkin bread that I also make.

I haven't eaten much eggplant--it is usually too watery for me....

Peel an eggplant and cut into half inch slices.
Coat it liberally with salt. Let it rest until the liquid seeps out of it, (Approx-2hrs??)
Then make a basic batter with flour milk and egg. Coat the slices of eggplant and drop into a pan with 1/2 inch of oil (hot) in.
Fry 5 min and flip. (look for the batter to be golden brown on the eggplant.)
Place on plate wil paper towel to catch excess oil.
They are yummy.

UM...........courgettes.............i don't know what you call them over there..........but they're not eggplant...........we call that aubergine here...
